Cookbooks
Give a gift that keeps on giving! We have 3 fundraiser cookbooks that are full
of yummy recipes and the money goes to wonderful causes! They are all just $10
each - Lucky Spur Saddle Club, Oskaloosa; Bone Appetit First Helping (Helping
Hands Humane Society, Topeka); and Jefferson County Humane Society Cook book.
Here’s a recipe from the Lucky Spur Saddle Club Cookbook:
Virginia’s “Country Social” Macaroni and Cheese
1 (16-oz) pkg. elbow macaroni American Beauty
1 lb. box Velveeta Cheese
1 cup whole milk or half & half
1 envelope Zesta brand soda crackers
1 stick butter
PaprikaCook macaroni in salted boiling water to cover until almost tender. Drain and put in a 9”X13” au gratin pan. Cube cheese and layer over macaroni. Crumble cracker over all. Cut butter into thick pats and put evenly on top of crackers. Sprinkle with paprika. Bake 350o oven for 20 minutes. Recipe can be cut in half and baked in 8”X10” pan. Do not cover to carry or keep warm as it will make the crackers soggy. Put in a basket and cover with a soft towel or cloth to carry. This is a good dish to carry in for family reunions as it is quick and holds well. Any leftovers can be refrigerated and warmed in the microwave. (This recipe is special to me as it is my Mother’s, and it is delicious!)
