and Jefferson County Humane Society Cook book.
Heres a recipe from the Lucky Spur Saddle Club Cookbook that I made for the
staff on January 1 when we did inventory and they loved it:
Old Santa Fe Soup
1 lb ground beef
1 medium onion chopped
1 lb Velveeta cheese
1 can Rotel tomatoes & green chilies
1 can tomato sauce
1 can corn
1 can pinto beans
Brown ground beef and onion. Drain grease. Add canned ingredients to meat. Cut cheese in chunks and add to soup. (Can melt cheese in microwave and then add to soup mixture to cut down on cooking time.) Heat well and serve with chips.
We pre-cook the meat and then mix everything together and heat it in a crock
pot to serve at the store. Fast, easy and good!

This fall when you clean out your tack room or horse trailer, think of the KSU
Equestrian Team and bring your items to Roy Frey Western. We will get them to
