Chuck Wagon Cooking Class
If you missed the cooking class last Saturday, you missed a real treat. It was fun and the food was great. We all learned a lot. Thanks so much to Flying W Ranch, Josh & Gwen Hoy and Newt Dodge for the great experience. Thanks to Drew Forster, Farview Farms Meat Company www.farviewfarmsmeat.com for the tasty beef! Here’s an excerpt from their presentation and handout.

“I’ve seen more trouble from scalded beans and burnt biscuits, hire a better cook.” – Charlie Goodnight
to his partner’s son, Jon Adair, who was seeking advice on how to deal with an unhappy cow camp.

Trail food consisted almost entirely of bacon and beans, chili beef, biscuits and coffee. Trail food by its nature had to be simple and easy to prepare within three to four hours. As that is usually all of the time the cook had after pulling camp, driving the chuck wagon five to fifteen miles, and setting camp again.

Coffee - grind beans, wrap and tie in cloth if drinkers are finicky or add straight to pot if not, boil at least 30 minutes before drinking.

Bacon and Beans – one slab bacon cut in as many pieces as there are men to feed. ½ ladle dry beans per man rinsed and soaked (approximately 1/3 cut per man). Onions and chilies. Fry bacon, chop onions, and chilies in bean pot, add beans. Add water to just cover beans. Simmer until tender. Don’t salt until 5 minutes before serving.

Chili Beef – ½ pound beef/man cut into as many pieces as there are men to feed. One joint bone, a section of ox tail, several ribs or a broken marrow bone, any of these will work. Onion, chili, molasses, salt, wine or vinegar. One quart canned tomatoes. Brown beef chunks of bones in Dutch oven or covered kettle. Add onions and chilies and brown. Add wine or vinegar, tomatoes, molasses, and salt to taste. Simmer covered for three or four hours.

Come see the Flying W Ranch at the $1,500 added Chuck Wagon Cook Off at Ottawa Old West Days June 29 – July 1 sponsored by Purina. Go to www.flying-w-ranch.net for more information on their guest ranch services.

Don’t forget to accessorize the bathroom, too! Can’t decide? How about a gift certificate?

What’s New at Roy Frey Western?

- Rain Gear – The top sellers this past month at the store have been Muck boots and Outback raincoats!

The Outback raincoats can be turned inside out and stuffed into a self-contained backpack. They are comfortable, light weight, lots of pockets and machine washable. Perfect to take on cruises, trail rides, or leave in the trunk of your car just in case you get caught in a shower. Lemon, Orange, Lime, Taupe, Red, Navy, and Black are the colors options. Also, they come in both short or long lengths.

Muck boots are wonderful. If you haven’t tried them, you are missing the most comfortable rubber boot ever. Light weight, easy to put on, dry, breathable, and warm. They come in several heights and sole styles.

- Bug Eye Fly Masks – Kensington Protective Products has introduced a new fly mask with no darts or seams at the eye. This mask gives maximum protection and comfort. The bug eye creates a large pocket for the animal’s eyelashes and tactile hairs to not become irritated by pressure. Roy Frey Western is carrying both the masks with and without the ear protectors and other fine Kensington products such as leg guards, tail bags, gear bags and hay bags.

- Hyalun - Roy Frey Western is now carrying the Hyalun oral hyaluronic acid products for both horses and humans (www.hyalun.com). Proactive trainers and horse owners across the country are making Hyalun a part of their horse’s daily joint maintenance routine. Why? Because just like the oil in your car’s engine, with time and wear, the viscosity of your horse’s synovial fluid (the cushion between the joints) can diminish subjecting your horse to potential friction and wear. We are carrying the Hyalun 30; Hyalun 90 and HyalunRub (moisturizing joint cream that soothes and maintains joints and muscles with hyaluronic acid and emu oil).

- Saddle Barn Chinks – Ride in style in chinks made by Saddle Barn. Choose from cowhide, floral tooled or a custom top grain chap leather with fringe.

- Double Diamond Halters and Leads – We are now carrying the Buck Brannaman halters and leads. Lead and tie your horse with the correct gear.

- Kids Boots - Just arrived are over 100 new pair of kids boots from Justin, Mudruckers and Old West! In work or dress boots, the kids will be styling at the county fairs this year!

- More New “Spring Creek Run” Bath Accessories – If you have the Chris Cox “Spring Creek Run” bath accessories, you will love adding the new items – clock, picture frame, wall hook and welcome sign. They are just beautiful and will compliment your existing décor.

- New “Taking Off” by Chris Cox Bath Accessories – The new “Taking Off” bath accessories pattern is exquisite! Very Southwestern in terra cotta accented with bright colors. All the bath accessory pieces are available. This would be a perfect wedding or graduation gift or a nice treat to yourself to spruce up your bathroom.

- Short Sleeve Men’s Shirts – get them now before they are gone. Perfect for Father’s Day

- Straw Hats – Have Dewayne custom shape a palm leaf hat for you and have it branded! Huge selection – get them while they last! Don’t forget to bring in your felt hats to be cleaned and shaped before the next show!

- New Stetson Ladies blouses and skirt sets – beautiful for dress occasions. The ivory is perfect for a western wedding.

- Spring and summer apparel - Denim shorts, capris, and short sleeve blouses in all the latest styles and colors are in! Always look your western best!

- Soft Stuffed Animals – Come see the new Blue Heeler, Australian Stock Dog, Goat and PB Bull stuffed toys in the kids department. They are so fun!

Memorial Day - Wright Flight Fundraiser Trail Ride - Melvern
On Memorial Day, Monday, May 28, 2007, a trail ride to benefit the Wright Flight Program will be held at Eisenhower State Park, Cowboy Campground, Melvern, Kansas. Come enjoy the beautiful Kansas scenery with your equine partner and friends. For a minimum donation of $35 per rider you can enjoy a catered dinner and one ticket for our door prize drawing. Silent Auction items will be available for purchase during dinner.

Registration begins at 8:30 a.m. and a three hour ride starts at 10:00 a.m. Dinner will follow. Please leave your stallions, pets, and alcoholic beverages at home. Call 785-232-0579 for more information. Registration forms are available at Roy Frey Western.

If you are interested in donating items for our silent auction, we would be most grateful. What ever you are able to donate is very much appreciated. (Ideas include, saddle bags, treats, medical kits, halters, lead ropes, saddles, saddle pads, bags of feed, muck carts, gift certificates, etc.)

The Wright Flight Program is a non-profit organization. Dewayne Burgess, a retired Air Force fighter pilot, and owner of Roy Frey Western in Topeka, KS, founded the original Kansas Chapter in 1996. He later encouraged friends in Missouri to establish a chapter and currently serves as President of the recently combined Kansas/Missouri Chapter.

This program is designed to use aviation interests to motivate students to perform at a higher level in school. Students, grades 6-12, must meet two requirements to be successful in the Wright Flight Program. First, each student must score a minimum of 85% on an end of course exam for their aviation class. Second, the student must set and achieve an academic or behavioral improvement goal. The student’s chosen goal must be specified in a contract provided by Wright Flight. This contract is then signed by the student, the student’s parents, and the student’s teacher. When students meet all requirements, the reward they earn is a flight with a volunteer pilot in a light aircraft. They even have the opportunity to fly the plane under the watchful eye of a highly experienced pilot! If the goals are not met, the student is welcome to continue trying until they do in fact reach the sky. Please visit www.wrightflight.org if you would like more information on the Wright Flight Program.

Our goal for this trail ride is to help raise money to offset the fuel costs accumulated by the pilots volunteering their time and aircraft to reward these students. All of the resources that are to be used to organize this trail ride will consist of 100% of donations from wonderful people like you. In addition, 100% of the funds received from these donations will go directly to the purpose intended. I do hope you are able to support a worthy cause. Thank you in advance for any and all support you can give this wonderful program. We greatly appreciate our sponsors and please patronize them!

Call 785-232-0579 (Roy Frey Western) to make your reservations for the ride or drop off your donation.
