National Barrel Horse Association State Championship

be used as an alternative to spray on fly repellants. They are
particularly useful for repelling mosquitoes.

Prairie Sunset Glows On Annual Gala
The Great Overland Station celebrates our Western Heritage at its 5th annual gala “Sunset on the Prairie.” The evening of Western art, entertainment, and fare will be held on Friday, June 20th, at 701 North Kansas Avenue. All proceeds benefit the Great Overland Station and the All Veterans Memorial.

The Great Overland Station will transform into the “GOS Ranch” for the evening, which begins at 6:00 with cocktails, dinner at 7:00, plus entertainment and a live auction to follow. Diners will enjoy the Flying W Ranch’s famous “Chuck Wagon Buffet” featuring prime Kansas beef. The evening will also include a “Quick Draw Showdown” featuring well-known regional artists. These artists, Debra Clemente, Judith Mackey, and Stan Herd, will create masterpieces in front of the gala’s guests. The works of art will later be offered, along with other special items, during a live auction. Besides treasures for the eyes, the event will offer pleasure for the ears when Western singer Judy Coder performs at the gala, as well as cowboy poet Geff Dawson.

Kansas was a major part of the “wild, wild West”, known for lawmen such as Wild Bill Hickok and Buffalo Bill Cody, and for outlaws such as Jesse James. The advent of the railroads through Kansas after the Civil War greatly expanded trade opportunities and encouraged settlement. The cattle industry soon became a staple of this region and the cowboy was synonymous with the West. “Sunset on the Prairie” will recall those adventurous days.

Tickets for the gala can be purchased at the Great Overland Station or by calling 232-5533. Individual tickets are $150.00 each or $250.00 per couple. Patrons may purchase a table for eight for $2,500.00 The Great Overland Station is a non-profit museum/education center which celebrates regional heritage with an emphasis on the railroad’s role in local and national history. The station itself was restored and re-dedicated in the summer of 2004.

New -- Ultimate Horsemen’s Challenge Association
Want To Have Some Fun? Come Ride With Us!

The Ultimate Horsemen’s Challenge Association (U.H.C.A.) invites you to come ride with us and have fun on horseback in 2008. The events will be similar to the Extreme Cowboy Race with the association providing a regional format with different ability level classes to encourage riders of all skill levels to become involved and sharpen their horsemanship skills.

The founding members of the U.H.C.A. come from both sides of the Missouri-Kansas state line. All are from a diverse background of horses and good horsemanship. The clinics and challenges (events) will be held on both sides of the Mo-Kan state line, however, competitors are welcome from anywhere.

Points for year end awards will be kept throughout the year. Riders need not make every event as points from an individual’s top five finishes will determine the teams (rider/horse) year end standings.

Each challenge will consist of four core classes: Youth 17 & under, Novice Amateur, Amateur and Open. Nominated members of the U.H.C.A. will have points kept by the association secretary for year end awards.

The U.H.C.A. invites you to come learn, ride and enjoy the challenges of the outdoor obstacle courses. We are dedicated to having fun, riding safe and enjoying fast-paced events for riders of any level.

There will be several professional training clinics offered throughout the year. These are designed to help horse and riders with any problems they might encounter and advance their training levels.

Extreme Cowboy Race

New this year –
         Open horses to be sold at auction

Saddle and Sirloin Club will host Craig Cameron's Extreme Cowboy Race on June 20-22, 2008.

There will be two divisions with thirty riders in each division: Non-Pro & Open. On Saturday evening, June 21st, the horses competing in the Open Division will be for sale at an auction held in the indoor arena at Saddle and Sirloin.

Kansas Horse Council Promotional Trail Ride
Join trail riding enthusiasts for a week-end of camping and riding the trails at beautiful Elk City Lake. Experience Ozark-like topography only open to horseback riders twice a year. This is a free ride, free food, free camp and free fun. Please let us now if you are coming so we can plan for the burgers & hot dogs!

Elk City Lake - 7 miles northwest of Independence, KS on Hwy 75 or 4 miles south of Hwy 400/75 Junction. Turn west on 5400 Road and follow road toward dam and outlet camp.

Friday, May 16 - Campers may arrive at Outlet Campground. Area includes pit toilets, water hydrant, primitive camping, and shelter hourse with electricity. No camping fees on this special week-end.

Sat., May 17 - 9 am - Trail riders leave camp. Pack your own lunch.
6 pm - Potluck dinner at shelter house (burger and hot dogs provided - bring dish to share)

Sun., May 18 - 9 am - Ride out. Return to camp by noon.

Ride Length:     The ride will consist of a leisurely 3 hour

                        all levels of riding experience.

Activities:        A catered dinner will be provided after
                       the ride for all our participants.

There will be a silent and live auction during dinner entailing
donations from various vendors.

Cost:             $35 for ride & dinner or $15 for dinner & auction

Goal:             In hosting a trail ride of this caliber, we are hoping
                     to raise enough money to offset the fuel costs incurred
                     by the pilots volunteering their time and aircraft to
                     reward these students.

What’s Cooking? - At Roy Frey Western Lifestyles
I love to cook – just look at Dewayne and I – who would have guessed! I also like to collect cookbooks. For those of you who like good home style foods that are easy and you can identify all the ingredients required, I highly recommend “Georgia Cooking in an Oklahoma Kitchen” by Trisha Yearwood. The following rib recipe is from Trisha’s cook book. I figured if it was good enough for Garth, it was good enough for Dewayne! These were the best ribs I have ever cooked! It took a little extra time, but WOW! Serve with coleslaw, corn on the cob, baked beans and strawberry shortcake and WOW what a feast! Enjoy!

Barbecued Pork Ribs (Serves 8)

Marinade:
2 cups soy sauce
1 cup water
½ cup light brown sugar, packed
1 tablespoon dark molasses
1 teaspoon salt
5 pounds meaty pork ribs

Barbecue Sauce:
1/3 cup water
1 14 oz bottle ketchup
1 12 oz bottle chili sauce
½ cup light brown sugar, packed
1 teaspoon dry mustard.

In medium saucepan, combine the soy sauce, water, ½ cup brown sugar, molasses, and salt. Bring the marinade to a boil and set aside to cool.

Put the ribs in a large, turkey-size oven baking bag or sealable plastic bag. Support the bag in a 12 x 14-inch baking pan. Pour the marinade over the ribs and seal the bag. Marinate the ribs in the refrigerator overnight, turning the bag occasionally to thoroughly coat the meat.

The next day, preheat the oven to 375 F.

Drain and discard the marinade from the bag. Cut 4-slits in the top of the baking bag if you are using one (sure makes clean up easier). Otherwise, drain the marinade and transfer the ribs to the baking pan, and cover the pan with foil. Bake the ribs for 2 hours.

While the ribs are baking, prepare the barbecue sauce. In a large saucepan, blend the water, ketchup, chili sauce, brown sugar, and dry mustard. Bring this mixture to a boil, stir well to dissolve the sugar, and set aside to cool.

When the ribs are cooked and tender, open the bag and discard the drippings. Lower the oven temperature to 350 F.

Brush the ribs on both sides with the barbecue sauce and return them to the oven to bake for 30 minutes longer. Just before serving, throw the ribs onto the barbecue grill or blacken them under the broiler to give them a bit of a char.

Jo’s tablescape idea for this meal:  Serve on western dishware with a clean, old boot full of flowers for your centerpiece. Use bandana handkerchiefs under the boot or as placements or napkins as they wash up nicely.
